Quarantine Oatmeal Cookies

I have a problem with remembering what I create that drives my family crazy

My family was craving cookies so I scavenged the cabinets for something reasonably healthy. These Redline Oats by Stoked Oats are pretty coffee-intense for breakfast but looked like a good candidate for an afternoon pick-me-up. The nice thing is that they have walnuts and chocolate chips which didn’t exist in any other form in my house.

Since my family liked this creation, I’m writing it down for them.

Ingredients

1/4 cup butter

1 egg

1.5 cups Redline Oats (or whatever other fancy oat mix you might have)

1 cup whole wheat flower

1/4 cup brown sugar

1/2 teaspoon salt

1.5 teaspoons baking powder

1 tablespoon cinnamon

Instructions

Preheat oven to 350F

Mix butter, egg and sugar

Mix other ingredients

Mix altogether

Make golf ball size clumps of mixture and flatten slightly on baking pan

Bake 12 minutes

Cool 10 minutes
